Coffee Brownies

We all deserve a break every once in a while — a coffee break, that is and these coffee brownies are the perfect accompaniment. You only have 15 minutes, so mid-chug, there’s no doubt you’ll also be grabbing a quick snack to go with it. You’re in it for the pick-me-up, so let’s stay caffeinated, shall we and try these coffee brownies?  We love to use our award winning Celeste blend for this recipe. The vanilla milk chocolate tones in this coffee blend work so well.

Ingredients

For the Brownies 

For the Topping 

    • 150g (5oz) chocolate
    • 40g (1 1/2oz) hazelnuts/walnuts, halved, to decorate

Method

  1. Preheat the oven to 170 degrees Celsius and butter and flour a 9-by-12-inch baking tray. Line the base of the pan with parchment paper.
  2. Combine the chocolate, butter, coffee, and salt in the top of a double boiler and, over simmering water, melt the chocolate, stirring occasionally.
  3.  In a large mixing bowl, combine the sugar, eggs, and vanilla and whisk until smooth. Add the melted chocolate mixture and continue whisking until well combined. Fold in the flour until you can’t see any traces of white, but do not over fold. Gently fold in the pecans.
  4. Scoop out into the prepared pan and spread and jiggle the pan until the batter is evenly spread.
  5. Bake for about 35 minutes, or until a toothpick inserted into the middle of the tray comes out clean. Set the tray on a rack to cool for 1 hour. Run a knife around the edge of the pan to loosen, then cut into squares as desired.
  6. Melt the additional chocolate and drizzle over the brownies. Scatter the hazelnuts over the top also.
  7. Serve and enjoy!

Be warned these coffee brownies are moreish!!!

Increasingly there are studies being conducted on just how green tea can contribute to a healthier lifestyle.

Green tea, the history and ‘taking a moment’

Green tea has been treasured in China by emperors and revolutionaries, monks and poets, not to mention the everyday unsung heroes of life. From its very beginnings around five thousand years ago, Green tea has been an important part of traditional Chinese medicine, whether as a digestive aid to accompany meals, or even as a headache cure.

It has also been used by monks to help maintain a ‘relaxed alertness’ whilst meditating, using the simple steps of the tea ceremony to clear the mind of distractions and calmly focus on the preparation, sipping and appreciation of tea. We believe that this quality of ‘taking time’, of mindfully drinking tea and taking time out from our busy days can bring huge benefits to wellbeing, especially as our lives become so hectic.

Green tea and antioxidants – the health benefits of green tea.

Green tea does have more health benefits than black tea which can be attributed to its lack of processing. Green tea is higher in protective polyphenols. The major polyphenols in green tea are flavonoids, the most active of which are catechins and epigallocatechin gallate (EGCG) which function as powerful antioxidants. Antioxidants are known to protect the body against disease and are an important part of a healthy diet. Antioxidants can be found in a range of fruits, vegetables and other unprocessed foods. As part of a balanced diet, green tea can be a good source of antioxidants.

Green tea and caffeine

Green tea does contain caffeine, and varieties and brands may differ. An equal quantity of green tea contains less caffeine than coffee (one cup of green tea contains approximately 35-80 mg compared to approximately 100-400 mg in the same size cup of coffee), but it can still act as a stimulant. As a result, some people find that drinking green tea increases energy levels, concentration and mood, but this effect may vary between individuals.

Christmas Coffee with a Twist

With the holiday season in full swing treat your guests to a delicious Christmas coffee with a twist! We love a Bailey’s coffee after dinner. It’s simple to make and the perfect combination.

INGREDIENTS

INSTRUCTIONS

  1. Warm an Irish coffee or a medium sized wine glass with hot water. Discard the water.
  2. Using a jigger, measure 35.5ml Baileys Original Irish cream and add along with the sugar to the glass. Add the coffee and stir well with a teaspoon to dissolve the sugar. We recommend our award winning Celeste blend.
  3. Carefully spoon the whipped cream on to the top of the coffee. The cream should float on top of the coffee so do not attempt to stir.
  4. Garnish with the chocolate servings. Relax & enjoy!

‘Tis the season to try all the festive delights.

It’s that time of year which means the new Christmas range of festive drinks are available, brought to you in our latest coffee cup design to add even more excitement and wonder. Just to get you in the festive mood and to add seasonal aesthetics to your Insta, the cups are designed with our favourite red nosed Watermark reindeer!!

Along with the Christmas cup, we have also added a host of festive delights to our drinks menu just in time for the holiday season. Our Christmas menu includes a Gingerbread Latte, a Cinnamon Cappuccino, a Blackcurrant & Honey Winter Tea, a White Hot Chocolate, Flamed Orange Hot Chocolate to name but  a few.

Gingerbread Latte

Our signature 1938 coffee blend and milk are highlighted by flavour notes of gingerbread, cinnamon, and nutmeg to create this incredible beverage that’s a firm favourite. Enjoy it topped with whipped cream and a dash of cinnamon spice

INGREDIENTS
  • 20ml SHOTT Gingerbread
  • Steamed Full Cream Milk
  • 30ml Espresso Coffee
  • Garnish: Cinnamon Powder
METHOD
  1. Press the coffee shot into a mug or heatproof glass.
  2. Add SHOTT Gingerbread and stir to combine.
  3. Heat up your milk by using the steam arm on a coffee machine.
  4. Pour the hot milk into the cup in a circular motion, to combine.
  5. Garnish with a light dusting of cinnamon powder.
  6. Serve & enjoy.

Salted Caramel Latte

Our award winning Celeste coffee blend and milk are enhanced with a dash of SHOTT salted caramel to create this incredible beverage. Enjoy it topped with whipped cream, caramel sauce and small fudge cubes

INGREDIENTS
  • 20ml SHOTT Salted Caramel
  • Steamed Full Cream Milk
  • 30ml Espresso Coffee
  • Garnish: Whipped Cream, Caramel Sauce & Small Fudge Cubes
METHOD
  1. Press the espresso coffee into a mug or heatproof glass.
  2. Add the SHOTT Salted Caramel to the coffee and stir to combine.
  3. Heat up your milk by using the steam arm on a coffee machine.
  4. Pour the hot milk into the salted caramel coffee shot.
  5. Garnish with whipped cream, caramel sauce & small fudge cubes.
  6. Serve & enjoy.

Cinnamon Cappuccino

INGREDIENTS
  • 20ml SHOTT Cinnamon
  • Steamed Milk
  • 30ml Espresso Coffee
  • Garnish: Whipped Cream and Cinnamon Powder
METHOD
  1. Press the coffee shot into a mug or heatproof glass.
  2. Add SHOTT Cinnamon to the cup and stir.
  3. Heat the milk using the steam arm on a coffee machine.
  4. Pour the hot milk into the cup in a circular motion, to combine.
  5. Garnish with whipped cream a and sprinkle of cinnamon.
  6. Serve & enjoy

Crème Brulée Cappuccino

INGREDIENTS
  • 20mL SHOTT Butterscotch
  • 180mL Full Cream Milk
  • 30mL Espresso Coffee
  • Garnish: 1 Teaspoon Caster Sugar
METHOD
  1. Press the espresso coffee into a mug or heatproof glass.
  2. Add the SHOTT Butterscotch to the coffee shot and stir to combine.
  3. Next, heat the milk using the steam arm on a coffee machine.
  4. Pour the hot milk into the cup in a circular motion to combine, ensuring there is a significant amount of dry foam on top.
  5. Sprinkle the sugar over the top of the coffee and caramelise with a blow torch to create the Brulee crust.
  6. Serve & enjoy.

HOT CHOCOLATES

Mint Hot Chocolate 

INGREDIENTS
  • 15ml SHOTT Wild Peppermint
  • 30g Single Origin Barista Hot Chocolate
  • 10fl oz Full Cream Milk
  • Garnish: Whipped Cream & Crushed Peppermint Candy
METHOD
  1. Heat the milk using the steam arm on a coffee machine.
  2. Add the Hot Chocolate
  3. Add the SHOTT Wild Peppermint to the hot milk.
  4. Stir to combine.
  5. Pour the hot chocolate into a mug or heatproof glass.
  6. Garnish with whipped cream & crushed peppermint candy.
  7. Serve & enjoy.

White Hot Chocolate

INGREDIENTS
  • 22ml SHOTT White Chocolate
  • 30g Single Origin Barista Hot Chocolate
  • 10fl oz Full Cream Milk
  • Garnish: Chocolate flakes/marshmallows (optional

  2. Add the Hot Chocolate
  3. Add the SHOTT White Chocolate to the hot milk.
  4. Stir to combine.
  5. Pour the hot chocolate into a mug or heatproof glass.

Watermark Coffee and The Peter McVerry Trust

Over the years we’ve been fortunate to work with The Peter McVerry Trust as they strive to achieve their vision which is an Ireland that supports all those on the margins and upholds their rights to full inclusion in society. The charity provides low-threshold entry services, primarily to younger people and vulnerable adults with complex needs, and offers pathways out of homelessness based on the principles of the Housing First model.

Peter McVerry Trust opened Ireland’s first Youth Café for children and young people who are homeless, or at risk of becoming homeless in October 2015. Watermark Coffee are delighted to still be involved with such a service which is incredibly important as it provides a safe and supportive, space to vulnerable young people.

CEO Pat Doyle said “This service is one which we have been seeking to develop for a number of years and the out of hours component was initially raised by people accessing homeless services. They clearly told us they needed somewhere they would be welcomed, somewhere they could go an relax during the day and evenings when they might not have anywhere else to go”

A total of 1,400 people were supported in 2018 through the youth café, where people experiencing homelessness can avail of advice, support and hot meals and drinks. The Youth Café provides a safe, positive and welcoming space for young people. Throughout the week a variety of activities and supports are available to people who are accessing the service. Events such as mindfulness classes, quizzes and games nights are also held in the café.

We’re delighted to be supporting such a cause so as to ensure that The Peter McVerry Trust can continue to provide crucial services as people begin to leave homelessness behind for good.

Halloween has arrived at Watermark and we’re delighted! With the colder weather comes lots of good things like cosy evenings in front of the fire, pumpkin spiced lattes and hot chocolate! Add some spice to your autumn with a few of our October Treats!

Some of our favourite Halloween options for you to try are as follows:  We’ve got the Pumpkin Spiced Latte, Salted Caramel Latte, Crème Brulée Cappuccino, Ghostly Hot Chocolate, White Hot Chocolate and Flamed Orange Hot Chocolate.

Ghostly Hot Chocolate

Using our single origin organic Tanzanian Hot Chocolate enhanced with a dash of SHOTT coconut and white chocolate we have created this delightful hot cocoa drink. Enjoy it topped with marshmallows and chocolate flakes for the ultimate treat.

Flamed Orange Hot Chocolate

We’ve teamed our single origin organic Tanzanian hot chocolate with a dash of SHOTT flamed orange syrup and the results are delightful. Enjoy it topped with whipped cream and chocolate flakes.

White Hot Chocolate

  5. Sprinkle the sugar over the top of the coffee and caramelise with a blow torch to create the Brulee crust.
